Herb Crusted Pork Tenderloin


What You'll Need

1 - 4 lb pork tenderloin (I used 2, 1.5 lb tenderloins)
1 Tbsp salt
2 Tbsp olive oil
4 cloves garlic, minced
1 tsp dried thyme
1 tsp dried basil
1 tsp dried rosemary

What You'll Do

Preheat oven to 475 degrees. Place pork loin on a rack in a roasting pan. Combine the remaining ingredients in a small bowl. With your fingers, massage the mixture onto the pork loin, covering all of the meat and fat. Roast for 30 minutes, then reduce heat to 425 degrees and roast for an additional hour. Allow to sit for about 20 minutes before carving. (if you use two 1.5 tenderloins like I did....cut cooking time down to an hour total).

All of the herbs and garlic turn into this nice flavorful crust.
Looks so good you could eat it.....wait, I did!
haha, I know I'm so funny!


I like to serve this with fresh, sweet corn on the cob!
